Cream Bulletin: why it’s important

On the CLAL website you can find weekly, monthly and annual quotations for cream and butter.

The price of cream changes on the basis of certain indexed parameters. The website of CLAL, an independent institute that analyses dairy market trends, gives the following definition for cream:

“‘Cream’ means the product obtained from milk with a milk-fat content of at least 10% by weight” (in accordance with Council Regulation CMO 1234_2007, Annex XV – Chapter III – Point 1).

Cream for industrial use from Compagnia Lattiero Casearia is used in cafeterias, cuisine and confectionery. Its fat content ranges from 10 to 30%. The best way to find out the price of cream in the milk market is to consult the bulletin published on the CLAL website. Here you can find the weekly, monthly and annual prices of farmgate milk, butter, cream and other dairy products in Italy, Europe and the world.

The cream bulletin and the milk market: what’s changed

Over the past decade, the milk market has gone through ups and downs that have seen farmgate milk, whey, milk powder, cheese, butter and cream prices fall and then rise again.

Several factors such as competitors with plant-based alternatives to milk and the growing demand for lactose-free products have hit the dairy sector and had a knock-on effect on prices. Due to changes in the legal and productive framework, prices seem to be finally on the way to more stability after a long period of uncertainty since 2009.

At the end of 2016, the farmgate milk price reached a low of 30 cents/litre (against an estimated average production cost of approximately 40 cents/litre) and subsequently recovered to more promising figures that are fairer for consumers and producers. If the farmgate price is too low, it will kill off a leading sector of the Italian agrifood industry.

The price of cream has also reached acceptable levels since 2017 and export quantities have increased, triggering the positive trend reflected in the CLAL cream bulletin.

Cream is experiencing an upward trend despite strong competition from plant-based cream, according to a snapshot from the CLAL cream bulletin, which is updated on an annual, monthly and weekly basis.

The best way to respond to vegan competition is to focus on raw material quality, guarantee of origin and supply chain transparency. It is also crucial to be able to count on reliable, prompt suppliers of a verified and quality-controlled raw material, such as the milk-based products sold and exported worldwide by CLC in Roccafranca (BS).

This Lombardy-based producer and exporter of milk and milk-based products applies protocols to verify and manage production procedures and product quality, aimed at guaranteeing product safety and legality in accordance with legal requirements laid down by Italy, the EU and all other importing countries.
