Custom Mascarpone: Packages and Characteristics

CLC mascarpone is produced using carefully selected fresh cream and citric or lactic acid, with a customizable fat content ranging from 35% to 45%, to meet the specific needs of diverse customers and markets.
The product is available in packages designed for both retail market and food industry:

  • HO.RE.CA. : 250 g and 500 g packages.
  • Industrial: 10 kg and 20 kg containers.

CLC also offers the option of private label production to meet specific customization requests.

Strictly Controlled Production Process

Selection of raw materials
The process begins with the careful selection of high-quality fresh creams.

Heat treatment
the cream is subjected to high temperatures to eliminate any microorganisms and ensure a long shelf life, preserving its organoleptic qualities.

Acidification
The addition of citric or lactic acid causes the cream to coagulate, giving mascarpone its characteristic creamy texture. This stage is meticulously monitored to achieve the finest balance between consistency and smoothness.

Packaging and rapid cooling
After coagulation, mascarpone is packaged and rapidly cooled to about 4°C to stabilize its structure and ensure its preservation.
